Vegan Chocolate Cookies with Pulsin Brownie Bites

Hello plant-based peeps! We have teamed up with Pulsin who make delicious award winning healthy snacks and protein powders. Today we have whipped up these tasty Vegan Chocolate Cookies with the Pulsin Vegan Brownie Bars!

The bars add a delicious nutty texture to the cookies - we won't be going back to a standard cookie any time soon! We hope you feel the same...

Vegan Chocolate Cookies with Brownie Bites

(Makes 14 smaller cookies - or 7 huge cookies!)

We have used Cup measurements for this recipe, but if you would like to use grams, head to this link for an easy conversion tool.


  • 1/2 cup Vegan Butter

  • 1/2 cup White Sugar

  • 1/2 cup Brown Sugar

  • 1 tsp Vanilla Extract

  • 1 cup Plain Flour

  • 2/3 cup Cocoa Powder

  • 1 tsp Bicarbonate of Soda

  • 1/4 tsp Salt

  • 1 tbs Oat Milk (or other non-dairy milk!)

  • 80g Vegan Dark Chocolate

  • 2 x Pulsin Hazelnut Brownie Bars


  • Preheat the oven to 180°C (350°F/Gas Mark 4)

  • Add the vegan butter, and both sugars to a bowl and cream together with an electric whisk or mixer. Add the vanilla and mix.

  • Sift the flour and cocoa powder into a mixing bowl and then mix in the Bicarbonate of Soda and salt.

  • Add the dry ingredients to the wet, mix well by hand until crumbly.

  • With a big knife, cut the Vegan Dark Chocolate and Pulsin bars into small chunks and add to the mix. The dough will be thick and crumbly.

  • Using your hands, roll into small balls, then squash the balls slighty and space evenly on a baking tray lined with baking paper.

  • Bake for 10 minutes. The cookies will still be soft in the middle when you take them out, but don't worry they will keep cooking and firm up as they cool.

  • Add to a cooling rack for 20 minutes before tucking in!
