
It's always nice to put that extra bit of effort in around Valentine's Day, whether you are lucky enough to be spending it with a loved one, or having a chilled out evening to yourself.
There's no better way to treat yourself than with these incredible vegan cookies & cream brownies! (Inspired by BBC Good Food) This recipe not only has simple ingredients, but it's also SO easy and quick to make! We've served it up warm with a homemade vegan ice cream & fresh berries plus a glass of fizz! The perfect indulgent evening.


Plant-Based Cookies & Cream Brownies
(Makes 10 brownies)
Ingredients:
260g self-raising flour
240g soft brown sugar
50g cocoa powder
1 tsp vanilla extract
110ml coconut oil
1 1/2 tbsp white wine vinegar
85g dairy-free coconut yogurt
150g plant-based cookies (we used Oreos!) broken up into chunks.
Method:
Heat oven to 170C/150C fan/gas 3 and line a 18 x 30cm brownie tin with baking parchment.
In a bowl mix together the flour, sugar, cocoa and ½ tsp salt.
In a jug mix together 125ml water with the vanilla, oil, vinegar and yogurt. Pour the wet ingredients into the dry and mix until smooth and combined.
Pour the mix into the tin and smooth the top. Push the chunks of biscuit into the batter, leaving some poking out of the top.
Bake for 30-35 mins, until set but still squidgy in the middle. Leave to cool in the tin, then cut into squares.

We also made a DELICIOUS vegan ice cream which is perfect if you have an ice cream machine:
Vegan Ice Cream
1 tin of Coconut Milk
3 Ripe Bananas
1 tsp Vanilla Extract
30g Coconut Sugar
Blend up all these ingredients then add straight to your ice cream machine and follow the instructions there!
