Molly's Plant Journey

Introducing Molly!

Molly, 24 is an Irish MA Student and after watching a video, she changed to a plant-based diet overnight! She recommends using YouTube as inspiration for plant-based news/inspo.

1. Hi Molly, so when did you start your plant-based journey and why?

Nearly three years ago after watching a really brief video online about the dairy industry and being disgusted about what actually goes into our milk. I then decided that eggs and meat couldn't be much better so I went completely off everything overnight.

2. Is there a certain food you miss and what do you have as a plant-based alternative?

Not particularly, I found pretty quickly that my tastebuds changed and I started to crave different things. When I do crave something like chicken etc I usually make something using similar sauces or seasonings and it does the job. TVP is a really great and cheap alternative that I use in lasagnes, taco's etc it's also quite cheap and really easy to prepare.

3. What’s your go-to easy dinner?

Literally any veg I can find roasted in the oven with Linda McCartney sausages. Some kind of curry or Thai green curry or as bad as it sounds instant noodles if I can't face cooking (or afford it!). Or soup so easy to make, cheap and yields a lot of portions.

4. Who is your favourite/most inspiring plant-based account to follow?

@thehappypear, they have been an institution in Greystones (Ireland) for years and the food in their cafe is great. They really focus on veg and less alternatives which I really like. Also Pick Up Limes on YouTube is a great source as she is a nutritionist, so I feel like her meals are really thought out.

5. Where do you see the future of Plant-Based eating?

I see it as being perhaps a bit more mandatory, if there is action taken in favour of the environment, agriculture for meat production will defiantly have to take hit. I think it's so much easier to eat vegan now than it was even a year ago, there are so many more options and recipes out there now. So the future of plant-based eating could be a really positive thing for our health and that of the environment.

7. Do you have any advice you would like to give to those just starting a plant-based diet?

Try not to lean on meat/cheese alternatives for the first few weeks, get to know some more recipes and allow your tastes to change. Watch as many Youtube videos as you can for inspiration. Not all your meals need to look Instagram worthy. Know your facts or the reason you want to be vegan, I found that so many people would really aggressively question me but there's so many benefits to being vegan that you can always hold your own. Also.... BEANS ON TOAST!
