Laura's Plant Journey


Our next plant journey story is from Laura aka @laurasgoingvegan Laura is a 26 year old teacher from London, and her Instagram account makes us feel SO hungry here at EAT.PLNT HQ! We are excited to share her plant journey with you below. She tried Veganuary in 2020 and never looked back since!


1. When did you start your plant-based journey and why?

I went Pescatarian in October 2018 after visiting my aunt in Norfolk. She took me to an animal rescue centre where stories were posted on every wall about the horrors of slaughterhouses. I'm quite an impulsive person and that was enough for me to decide that I wasn't going to be eating meat again. Whilst being Pescatarian, I took the time to research dairy & fish farming and with that decided to try Veganuary in 2020. I ended up absolutely loving it and have not looked back since! I feel so much healthier in almost every aspect of my life and above everything else, I have so much more energy. I love cooking, but in the chaos of everyday life was finding it hard to cook meals I really enjoyed, becoming vegan has restored my love for cooking with finding and trying new recipes. I now make it a priority to cook using fresh ingredients as much as possible!

2. Is there a certain food you miss and what do you have as a plant-based alternative?


Sometimes I end up craving fish and chips from a chip shop but a fair amount of local pubs serve fishless fish and chips and use Tofu as an alternative which is just as tasty! Yet to try and make my own though...


3. What’s your go-to easy dinner?

Mid week meals usually involve a pasta dish with lots of vegetables, or a jacket potato where I can experiment with different toppings, chickpea smash is a hot favourite!


4. Who is your favourite/most inspiring plant-based account to follow?


@thefoodietakesflight She has the most amazing recipes that are quick and easy! I recommend trying the 'no beef broccoli stir fry' 😋


5. Where do you see the future of Plant-Based eating?


There are alternatives for almost everything in supermarkets these days, making it a lot easier for people to access vegan ingredients and meals. I hope the market for Veganism continues to grow and appeal to wider audiences!


6. Which EAT.PLNT meal would you like to try the most?


Moroccan Style Chickpea Pie


7. Do you have any advice you would like to give to those just starting a plant-based diet?


Just keep going! It is ok to have slip up's. Accept them and keep moving forward! Experiment with different recipes and ingredients to keep things interesting and exciting at the beginning...it will slowly become your norm!
