Introducing Kim (aka @kimgoesvegan_)
We found Kim on Instagram where she posts "real food and accidental vegan finds". We love seeing her easy lunches and dinners and we're excited to share her plant-based journey with you!
Hello! My name is Kim, I'm 28 and a married mum of 2 living in the North East of Lincolnshire!
1. Hi Kim! When did you start your plant-based journey and why?
I originally went vegetarian in June 2018 after a discussion with my husband about how little meat we actually ate. I'd not eaten fish since I was 12/13 and only really ate chicken/sausages. We were fed up of feeling rubbish and initially cut meat to try encourage us to eat better. We decided to trial for a month to see how we got on but didn't look back. Around October that year, one of my friends from work who was also vegetarian asked if I'd heard of Veganuary and if I was taking part. I looked into it and we decided to try it. After the success of going vegetarian for a month and sticking to it, we started transitioning in December 2018 to veganism and swapping our every day thinks like milk, cheese etc. Officially I went vegan 1st January 2018 and have been ever since!
2. Is there a certain food you miss and what do you have as a plant-based alternative?
One of the things I actually missed was bacon. Quorn vegan smokey ham slices fried in a little oil tastes so realistic, it's incredible!
3. What’s your go-to easy dinner?
One of my favourite meals is a slow cooker chilli. I just throw together baked beans, kidney beans, peppers and onions with some spices and crushed chillies and let it cook until we're ready later in the day.
4. Who is your favourite/most inspiring plant-based account to follow?
I'm a huge lover of @uglyvegan! I think that people often believe you have to always eat perfectly presented bowls but life doesn't always work that way. I like the realness.
5. Where do you see the future of Plant-Based eating?
I think it's amazing just how many more vegan options have come out in the last 6 months, let alone the last year and a half since I became vegan. It's great to see vegan options becoming a "norm" and so hopefully the future will be more plant-based. You can pretty much find a substitute for anything and more and more people are realising this. To help the future of our planet, I hope people continue to adopt more plant-based and vegan views,
6. Which EAT.PLNT meal would you like to try the most?
7. Do you have any advice you would like to give to those just starting a plant-based diet?
I think my best advice is to read into things and ask questions. Everybody starts somewhere and the internet can be a fantastic source of information, but also quite daunting. Instagram has helped me find so much inspiration and is a great place to find meal ideas, tips and like minded people.
